Easy Treats for the Holidays

The holidays are here! Here are a few easy holiday desserts you can prepare for your dinner party!

Maja Blanca from The Skinny Pot

Ingredients:

  • 1 can 14 oz condensed milk
  • 1 cup coconut milk
  • 1 cup water
  • 1 can 425 gram Cream of Style Corn
  • 3 packs White Knox Gelatin Sachet


Instructions:

  1. Pour 1 cup water Into a small medium sized sauce pan and add 3 pack of Knox gelatin. Let it stand for 2 minutes and turn on heat. Mix Knox gelatin and then add the coconut milk, condensed milk and cream of style corn. Continue cooking in low heat until mixture is simmering, then tun off heat.

  2. Pour mixture in a pan, let cool and refrigerate overnight or until the mixture is firm and cold.

  3. Serve Maja Blanca cold.

  • 10 small bananas
  • 20 fresh lumpia wrappers
  • 1–2 cups oil for frying
  • 1 cup coconut milk
  • 3/4 cup brown sugar
  • water


Instructions:

  1. Pour the coconut milk into a medium saucepan over low heat. Heat until bubbling slightly, about 5 minutes. Add the brown sugar and stir until smooth. Thicken the sauce to your desired consistency by keeping it at a low boil and stirring very frequently. I kept mine on the heat for almost 30 minutes. It thickens slightly as it cools, but you should be able to see it thickening in the pan as well.
  2. Steam the lumpia wrappers for a few minutes to soften them and make them easier to pull apart. I just held mine over the top of the steaming sauce pan for a few minutes. 🙂
  3. Peel the bananas and cut them in half lengthwise. Place the banana on the lumpia wrapper. If they are still too long to fit inside your lumpia wrappers, cut the ends off or cut them in half again. Dip your fingers in water and run them along the edge of the lumpia wrapper to make them easier to fold. Fold the top and bottom over the banana, and then roll it sideways, sealing the banana inside and using a little more water to make the wrapper stick together.
  4. Heat the oil in a large skillet or frying pan over low heat. When water sizzles across the top, add the lumpia, a few at a time, and fry for 3-5 minutes on each side or until golden brown and crispy. Drain on paper towels and allow to cool for 10 minutes. Serve with the dipping sauce.

Leche Flan from Panlasang Pinoy

  • 10 pieces eggs
  • 1 can condensed milk (14 oz)
  • 1 cup fresh milk or evaporated milk
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract


Instructions:

  1. Using all the eggs, separate the yolk from the egg white (only egg yolks will be used).
  2. Place the egg yolks in a big bowl then beat them using a fork or an egg beater
  3. Add the condensed milk and mix thoroughly
  4. Pour-in the fresh milk and Vanilla. Mix well
  5. Put the mold (llanera) on top of the stove and heat using low fire
  6. Put-in the granulated sugar on the mold and mix thoroughly until the solid sugar turns into liquid (caramel) having a light brown color. Note: Sometimes it is hard to find a Llanera (Traditional flan mold) depending on your location. I find it more convenient to use individual Round Pans in making leche flan.
  7. Spread the caramel (liquid sugar) evenly on the flat side of the mold
  8. Wait for 5 minutes then pour the egg yolk and milk mixture on the mold
  9. Cover the top of the mold using an Aluminum foil
  10. Steam the mold with egg and milk mixture for 30 to 35 minutes.
  11. After steaming, let the temperature cool down then refrigerate
  12. Serve for dessert. Share and Enjoy!

  • 8 oz good-quality chocolate (225 g), semi-sweet
  • 12 tablespoons butter, melted
  • 1 ¼ cups sugar (250 g)
  • 2 eggs
  • 2 teaspoons vanilla extract
  • ¾ cup all-purpose flour (95 g)
  • ¼ cup cocoa powder (30 g)
  • 1 teaspoon salt


Instructions:

  1. Preheat the oven to 350°F (180°C). Line an 8-inch (20 cm) square baking dish with parchment paper.
  2. Chop the chocolate into chunks. Melt half of the chocolate in the microwave in 20-second intervals, saving the other half for later.
  3. In a large bowl, mix the butter and sugar with an electric hand mixer, then beat in the eggs and vanilla for 1-2 minutes, until the mixture becomes fluffy and light in color.

  4. Whisk in the melted chocolate (make sure it's not too hot or else the eggs will cook), then sift in the flour, cocoa powder, and salt. Fold to incorporate the dry ingredients, being careful not to overmix as this will cause the brownies to be more cake-like in texture.
  5. Fold in the chocolate chunks, then transfer the batter to the prepared baking dish.
  6. Bake for 20-25 minutes, depending on how fudgy you like your brownies, then cool completely.

  7. Slice, then serve with a nice cold glass of milk!
  8. Enjoy!

Chocolate Chip Cookies from Rosanna Pansino

Ingredients:

  • 2 1/2 cups all purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons salt
  • 2 sticks salted butter, room temperature
  • 3/4 cup sugar
  • 3/4 cup firmly packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 12 ounces semisweet chocolate chips


Instructions:

  1. Preheat oven to 375ºF.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, with a hand mixer, cream together butter, granulated sugar, brown sugar, and vanilla.
  4. Add eggs, one at a time, mixing and scraping after each addition.
  5. On low speed, beat in the flour mixture and then fold in chocolate chips.
  6. Scoop balls of dough onto a parchment-lined baking sheet, about 3 inches apart. Lightly flatten cookies with the palm of your hand.
  7. Bake until golden brown, 7 to 9 minutes.
  8. Let the cookies cool on the sheet for 1 minute and then remove them to cool completely.
